Sourdough Pasta with Pesto and Roasted Cherry Tomatoes

Ingredients:

- 8 oz sourdough pasta

- 1/2 cup pesto sauce

- 1 pint cherry tomatoes

- 2 tbsp olive oil

- Salt and pepper to taste

- Grated Parmesan cheese for serving


Instructions:

1. Preheat the oven to 400°F (200°C). Toss cherry tomatoes with olive oil, salt, and pepper. Roast for 15-20 minutes until they burst and are slightly caramelized.

2. Cook the sourdough pasta according to package instructions. Drain and set aside.

3. Toss the cooked pasta with pesto sauce.

4. Serve the pasta topped with roasted cherry tomatoes and a sprinkle of Parmesan cheese.
