What You'll Need

To make sourdough pasta, you'll need just a few basic ingredients: sourdough starter, flour, eggs, and salt. That's it! No fancy equipment required, just your hands and a rolling pin.

Step 1: Mix the Ingredients

In a large mixing bowl, combine the sourdough starter, flour, eggs, and salt. Use your hands to mix everything together until a dough forms. If the dough feels too sticky, add a bit more flour. If it's too dry, add a splash of water.

Step 2: Knead the Dough

Transfer the dough to a floured surface and knead it for about 10 minutes until it becomes smooth and elastic. This step is crucial for developing the gluten in the dough, which will give your pasta that perfect chewy texture.

Step 3: Rest the Dough

Wrap the dough in plastic wrap and let it rest at room temperature for at least 30 minutes. This allows the gluten to relax, making the dough easier to roll out.

Step 4: Roll Out the Pasta

Divide the dough into smaller portions and use a rolling pin to roll each portion out into a thin sheet. You can then cut the sheet into your desired pasta shape – whether it's fettuccine, pappardelle, or ravioli.  You may want to look up some other sites for visuals to help you out here.  After the ingredients sourdough pasta and regular yeast pasta are pretty much made the same way.

Step 5: Cook and Enjoy

Bring a pot of salted water to a boil and cook your sourdough pasta for just a few minutes until al dente. Toss it with your favorite sauce, and voila! You have a delicious homemade pasta dish that will impress your friends and family.
